I love keeping some loaves of fruit bread in the freezer for the holidays. They come in handy for brunch, dessert, midnight snacks, just about any time. They don't take up much room in the freezer (unless you make them as muffins) for a lot of servings. I learned this from my mother-in-law. She brings out a different fruit & nut bread each day of the holiday! They definitely get eaten!
This makes a great gift for friends and neighbors too. Wrap in plastic wrap and a ribbon. Or wrap it in a pretty dish towel. It will be appreciated!
Here is the link at AllRecipes. The only change my daughter-in-law makes is to add 2 teaspoons of vanilla.
It's an inexpensive treat that tastes gourmet. Try it; I think you'll like it! And having it in the freezer feels like money in the bank. Click on the label "quick bread" below this post for other easy fruit breads you can freeze to use as needed. More money in the bank!
